Their 2021 Pink has a delicate yet bright pale pink hue. The nose offers lifted, fresh berry fruit and floral characters while the palate is dry yet flavoursome with lovely, ripe fruit characters and a gentle balance of acidity.
Made predominantly from Pinot Noir grown at their Chaytors Rd vineyard, the gravel soils and coastal influence produce grapes with light, bright and fruity characters ideal for this wine. The 2021 vintage was terrific and this block was the first into the winery and was in pristine condition with plenty of flavour.
The Pinot Noir was picked especially for this wine at low brix and with bright acidity. The grapes were pressed immediately and the skins removed to achieve the lovely pale pink colour. The juice was fermented in stainless steel tanks with a specially selected, cultured yeast from Provence in the south of France. After fermentation a careful balance of white wines were added to enhance to enhance the aromatics, flavour and texture.
