Pale straw in colour, with fresh notes of grapefruit, lifted lime and black currant leaf. A pure palate with lots of juicy citrus flavours tempered by crisp mineral acidity. 

Established in 2001, Waipara Hills is an award winning wine range from the South Island of New Zealand. Recipient to over 500 medals Waipara Hills has developed a fine reputation for crafting rich aromatics, with vibrant, complex flavours. 

Sauvignon Blanc grapes grown in the Awatere and Wairau Valleys of Marlborough. 

Growing conditions in Marlborough were ideal with warm temperatures during flowering and fruit set. The dry and settled summer ripened the fruit beautifully. These conditions continued through harvest ensuring the fruit came in healthy and flavoursome. 

Parcels were brought together into the winery, quickly pressed and run to tank to protect from oxidation. The juice was settled, then racked, warmed and inoculated with a range of aromatic yeasts. After approximately four weeks the ferments were finished. The wines were chilled and topped so that the aromatic flavours were released from the yeast lees. After another four weeks the wines were racked, and warmed ready for blending, after which they were fined using traditional methods to promote vitality anf freshness.
