This Australian Cabernet Sauvignon is a deep purple in colour with crimson hues. Perfumes of fragrant cassis, plum and chocolate with earthy, cedary oak undertones. The palate is prominent with ripe plum and licorice combined with fine grain tannins and well integrated cedar oak resulting in a mouth filling wine that leaves lingering sweet fruit flavours.
The majority of the fruit is grown at De Bortoli's own Victorian vineyards; Freemans Bridge located in the Northern parts of Heathcote (69%) along with Dixons Creek and Brooklands vineyards located in the Yarra Valley (31%). The Heathcote region had an early start to the vintage. Lovely warm growing conditions with a timely rain event in late January keeping the vines hydrated and healthy. Yields were relatively normal, and in the Yarra Valley a very early season with timely rainfall produced lovely flavours with generosity of fruit.
Fruit was harvested when the Winemaker felt the balance of flavour, tannins and sugars are at their optimum. Cold soaked and fermented over 7-8 days. Cool temperatures of 22.0-25.0C maintained to retain vibrant fruit.
