Deep coloured in the glass. Aromas of black forest fruit and plums with hints of floral and spice notes. A full-bodied wine, with a rich, juicy palate. The rounded tannins and fresh acidity support the long finish.
The grapes are highly concentrated, with a great aromatic potential. The grapes are harvested at optimal ripeness, destemmed and divided into two parcels. Most will be traditionally fermented on the skins for 10 days, adding structure to the wine. A small part will go through the thermovinification process with hot skin contact maceration then a cooler temperature fermentation. This special procedure enables a better extraction of the aromas and enhances the varietal’s aromatic qualities. Both parcels are blended together at the end of the winemaking process.
Syrah is the 6th most popular grape variety in the world – voluptuous, powerful, spicy and has been grown in Southern France since Roman times. This wine comes from a land full of history. Syrah vineyards have been selected from rocky terroirs located over four departments following the Canal du Midi through Languedoc-Roussillon between Carcassonne and Béziers. The warmth of the Mediterranean climate is perfect for Syrah.
The migrating birds of Passage Sud depict what happens during the harvest season, late August, when the grapes pickers enjoy the birds trial flights before their final take-off. The longer the birds stay in the South of France, the better it is for the vine growers, as it is a sign of warm and dry weather. Meaning the harvest won’t be threatened by autumn rains.
