"A complex and layered bouquet with very specific and distinctive aromas of tension and poise, a mineral and fruit core contrasted by delicate floral leesy coil. Fine, complex and layered on the palate lead by texture and tension, fine lees and fruit tannins, acidity and wonderful heartbeat of style. Fruit flavours of grapefruit and white peach, apple and pith. Very lengthy finish with complexity, definition, texture and purity. Lifted citrus blossom nose, with nuances of hazel nut, brioche, and lemon meringue. The palate is fresh and vibrant with finely laced acidity, and intense bursts of Meyer lemon fruit. There is a lovely line & length with purity of fruit, and a distinct minerality on the finish. This is their most Chablis-like expression of this wine to date, this wine will age with grace.
Hand-picked Hawke’s Bay Mendoza Chardonnay was whole bunch pressed, with only free run juice progressing to ferment in two concrete egg fermenters. Egg shaped fermenters keep yeast lees in suspension through the naturally occurring convection currents unique to the egg shape. Purity of fruit is maintained, richness and texture build, and the wine develops in a way totally different to stainless steel tanks or oak barrels. There is an element of minerality imparted through the winemaking process in concrete eggs that is usually apparent on the finish. Minimally handled through to bottling.
