Picked between 26th April – 1st May 2017. The grapes were selected and handpicked from clones: 2/15, Church, 40 A, 7 A. The clones were all whole bunch pressed and kept separate for fermentation. No yeast was added hence indigenous yeast performed the fermentation. 90% of the wine was fermented in stainless steel with the remainder fermented in older french barrique. Fermentation took approx 6-8 weeks at moderate temperatures. The wine was fermented to dryness with approx 0.5 – 1g/l natural residual sugar remaining. The wine rested on lees for texture and flow for approx 7 months before being racked and filtered for clarity and balance.
