This wine is dark and broody but with a purple brightness. Showing typical Cabernet cassis, violet florals, cut herb and fresh leather this is a mouth-filling wine with depth of flavour and long fine tannins extending the finish.

This was a year that so very much makes you think of Australia. It was a warm vintage with only sporadic rains in some parts causing the berries to ripen sooner than prior years. Through great management the resultant fruit is bright and flavourful with an integrated and fresh acidity. The wines will be full flavoured with plush fruit character and serious drinkability.

Sourced primarily from a mature, dry-grown vineyards across South Australia with a large component from the Monash Valley, situated just an hour from the famed Barossa. The fruit is hand-harvested and sorted before de-stemming and cool fermentation in open fermenters with regular hand plunging. Matured in seasoned French oak (30% new French) for ten months before bottling with minimal filtration and sulphur addition.

The See, Hear, Speak No Evil Organic wines are sourced from fully certified Organic vineyards and made using minimal additions. The wines are Organic, Vegan friendly and made to EU guidelines for minimal preservatives (less than 30ppm Free Sulphur).

Food Pairing: Lovely in it’s youth and will partner many richer styled cuisines.
