Lime zest, orange blossom and subtle notes of white peach and honey result in an attractive, aromatic nose. The palate is crisp and dry with mouth-watering acidity and wonderful balance. Enjoy over the next five to eight years.
This is a single vineyard wine from the Waihopai Vineyard. The vines are cane-pruned, cropped at a moderate level and were lightly leaf-plucked. The fruit condition at harvest was very good and the flavours were concentrated.
After gently pressing (the skins are discarded) the juice is fermented at low temperatures with a cultured yeast. The fermentation is stopped when we feel the sugar/acid balance to be perfect. Post fermentation, the wine is left to rest on lees for several months before being bottled here at the winery.
Food Pairing: With its crisp acidity, this wine is a wonderful aperitif. It is also delicious as a contrast to rich foods such as patés and terrines or subtle-flavours white fish and other seafood. Enjoy with sushi too, salads and ‘green’ flavours such as jalapeno chilli, fresh herbs and dishes that require a squeeze of fresh lemon or lime.
