"Elegant, complex and varietal. Aromas of orange peel and baked pear, some lees and gentle baking spice layers, blossoms, apples and quince. On the palate - a dry wine with a fresh pure fruit palate laced with flavours that reflect the nose along with a gentle silken texture and lengthy complex finish. An excellent example, well made and ready to enjoy from today and through 2024" Cameron Douglas, Master Sommelier
"More aromatic and ethereal than the previous vintage with similar pear, apple and yeast lees flavours. A pretty wine from a hot vintage" Bob Campbell, Master of Wine, Real Review, Sep 2019
A wide spectrum of aromatics from pear and white peach, citrus, quince and spice notes with an underlying minerality. These aromas are echoed on the palate, highlighted by crisp acidity and a long finish. This wine will reward careful cellaring over the next 5 – 7 years from vintage.
The Prophet’s Rock Pinot Gris comes from both the winemakers home and Rocky Point vineyards. Planting in these warmer areas of Central Otago and practising careful viticulture allows the winemaker to produce a very aromatic style of Pinot Gris, while retaining the trademark freshness of the region. This wine has achieved an avid following and wide acclaim, despite very limited production.
The vinification is heavily influenced by Paul’s time in Alsace where use of wild yeast, multiple small vessels and long ageing are the norm. After long slow ferments the various components are aged on their yeast lees before bottling.
Food Pairing: The texture, freshness and concentrated aromatics mean that this wine will harmonise will with a wide range of dishes. Consider white meats, seafood and fish, the wine will also work well with mildly spiced dishes.
