This Mystery Chardonnay displays notes of stone fruit, nuts, vanilla and oak.
The 2015/2016 growing season was warm and dry. A couple of heavy, but isolated, rain events in January and March provided some drought relief and kept canopies healthy and green. There was very little disease pressure leading into harvest, so winemakers were able to pick blocks purely on flavour and ripeness.
The fruit was machine picked and gently pressed directly to a mix of French oak barrels and stainless steel tanks. Fermentation occurred with a mix of indigenous and cultured yeasts (Burgundy isolates). The wine was then left to mature in its fermentation vessels on lees for a further 6 months, before being racked and blended.
