Extremely pale in colour, a very light salmon. The nose is restrained with notes of red fruits, rose petal and spice. The palate displays a core of vibrant red berry and candied fruits, building with layers of complexity to an impressively long and dry finish.
The winter of 2017 was very mild and without any rain at all until the month of June with soils replenished for the pending growing season. The mild conditions continued through Spring and Summer with very little rain but also without significant heat periods. The ripening was even throughout most of South Australia delivering very high quality with bright fruit flavours and good natural acidity.
Completely de-stemmed with a short maceration (a few hours) sufficient to impart colour and texture. Following a soft pressing, the juice is given a cool fermentation in stainless steel and allowed to ferment close to dry. Maturation on lees in stainless steel adds texture and malolactic fermentation is prevented to ensure vibrancy.
