The winemaking team continuously strive to craft elegant wines that exhibit distinct regional characteristics coupled with intensity of flavour.
The 2018 vintage in Margeret River was extraordinarily good and one that winemakers always hope for. The Shiraz fruit for our Strawberry Fields Rosé was sourced from two distinct Margaret River vineyards, both located in the north of the region and selected for their ability to ripen Shiraz early whilst achieving soft, ripe tannins. This is critical to making our balanced, flavoursome, vibrant style of Rosé‚ with perfumed aromatics reminiscent of walking through a field of strawberries.
The fruit was picked cold just prior to dawn and quickly pressed to minimize time on skins and subsequent tannin and colour pick up. Two press fractions were taken and then back blended pre-fermentation to achieve the desired style. A cool, long fermentation followed before it was immediately clarified post- ferment. Bottling followed just prior to Spring to capture the essential freshness and vibrancy so critical to Rosé wines.
