"I love the way pepper plays in the wine, with kaffir lime-like spice and crunchy granny smith apple notes that infuse it with particularly lively and fresh poise, even at two years of age. A pristine fruit profile hovers long and clean amidst fine, mineral acidity, with subtle sweetness tucked neatly into its folds. Hand picked from one hectare of vins, the story goes that the sun's last rays linger here, contributing to slow ripening and intense fruit flavours. "Bright straw-yellow colour with slight lemon-green hues. The nose is very fine and tight in expression with intense aromas of lifted citrus fruits integrated with toasty notes and a steely, fresh, minerally element. Dryish to taste, an amalgam of limes and toast forms a tight and concentrated core with a degree of richness and lusciousness. The palate has harmony and flows smoothly, with lacy acidity providing a slippery mouthfeel. The flavours open out and become softer and lighter on the finish. This is a tight and concentrated off-dry, slippery Riesling beginning to show some harmonious toasty development characters. Serve as an aperitif and with seafood and poultry over the next 4-5 years. Pruning and tying down of the vines frms an arched shape to promote even shoot distribution and plenty of space for brunches to ripen. The berries for this Mystery wine are pressed and undergo along, cool fermentation period in stainless steel. The aim is ti preserve the natural vibrancy and ripeness of the fruit through minimal intervention.
Food Pairing: The citrus and floral bouquet, light touch of sweetness and long finish make this wine an ideal accompaniment to dishes such as creamy seafood soups, and chicken of fish with coriander or coconut sauce. Spicy Asian foods and curries are a good match. It is also delicious served lightley chilled as an aperitif or to add an extra dimension to simple luncheon or vegetarian meals.
