Description
Deep red in colour with bright purple hues, this wine exhibits lifted and intense aromatics, with ripe and spicy dark fruit characters of blackberry and black plum mixed with a touch of pepper and vanilla bean. A full bodied, elegant wine it shows a balanced acidity and silky tannins culminating in a long finish on the palate. “Two in the Bush” Shiraz has instant appeal and the necessary balance & structure to age for up to five years.
Fruit for this cool climate Shiraz was selected from a diverse range of vineyards across the Adelaide Hills. A very dry spring and summer with cool to mild February nights led to optimal colour and flavour development in this red wine.
Harvested in the cool early morning, the fruit was destemmed with a large proportion of whole berries transferred into open fermenters. Parcels spent between 7-12 dates on skins before being transferred to new (10%) and older French oak barrels for 14 months.
