"Bright, light golden-yellow colour with some depth, lighter on the edge. The nose is initially a little shy, but opens to reveal ripe aromas of tropical fruit and green stonefruits along with lime marmalade, along with honey and musky botrytis. This has good intensity and concentration, unveiling notes of herbs which add to the freshness. Very sweet to taste and medium-bodied, the palate has a bright and well-concentrated heart of rich and succulent flavours of tropical fruits and green stonefruits, lime marmalade, honey and musk. The palate has a subtle unctuousness which is balanced by refreshing acidity. The flavours are underlined by a little alcohol power, and carry with good energy along a smooth, fine-textured line, the wine blossoming with tropical fruits, florals and honey leading to a long, lingering finish. This is a bright and vibrant, rich and lusciously sweet Late Harvest Sauvignon Blanc with ripe tropical and green stonefruit flavours, lime marmalade and honey on a fresh palate with good drive. Match with fruit desserts, flans and tarts over the next 3-4 years. Light lustrous gold colour in the glass. Delicate aromas of ripe stone fruits, honeysuckle and spiced orange. The palate is decadently sweet with concentrated flavours of mandarin, ripe nectarine and honey with hints of cloves. A soft line of acidity from its Sauvignon Blanc heritage cuts through the sweetness to balance the rich flavours to perfection. Luscious!
The grapes for this wine were handpicked one cold morning late April 2018. The raisined berries were crushed and pressed a first time. The juice from the initial pressing was chilled and returned to the press, allowing the skins to rehydrate, and thus obtaining a little more of the precious nectar. The viscous juice was settled then fermented in a small tank, a slow affair due to the high concentration of sugars in the juice. Bottled in August of 2018
