Description
Deep red colour in the glass. The floral bouquet of the Cabernet variety is pre-dominant in the wine's youth but develops into more complex aromas of a Grand Vin de Bordeaux. Careful vinification gives the red wine fantastic depth, elegance and great depth on the palate.
Sourced 20 miles south-east of Bordeaux in the Entre-Deux-Mers in the commune of Targon, on a siliceous clay / calcareous clay out-crop facing south / south-west, with drained land. The fruit for this wine thrives in the oceanic cliamte.
The harvest from the parcels is always carried out latter because of the dominant varieties, Cabernet Franc and Cabernet Sauvignon. Verification of the phenolic ripeness (tannins/anthocyanes) allows the winemaker to harvest ripe, healthy grapes. Harvest takes place mid-September to mid-October during a single week, over 45-50h/a.
The fruit for this wine is aged in subterranean, glassed vats for 12 months.
