Description
Rich, mouth-filling and spicy with apple pie, fresh pear and honey notes on the nose. This is a characterful wine with lovely texture, rich, intense flavours and a sliver of sweetness which is balanced by a gentle acidity.
The grapes for this wine are all from Sion and Biddy Barnsley's vineyard in the Waihopai Valley, lavished with love and attention by Biddy. The fruit was picked on April 14th with beautifully developed flavours, some shrivel and a little dry botrytis.
The grapes were hand-picked and then whole bunch pressed into older French oak barriques where they underwent a slow and gentle wild fermentation over several months. Once fermentation had stopped, the wine was left to rest on its yeast lees for several months before being filtered and bottled.
