Description
Mineral aromas with lemon and orange citrus and a distinct floral thread – crisp, dry finish. Juicy and fruity entry with lemon and lime driving through to a crisp finish. Mineral and spice notes linger. Nice herbals and a touch of tangerine also - a wine with density and presence.
With Babich's ongoing commitment to protect the environment it was a logical progression for them to move to the next step and investigate the benefits of an organic approach to viticulture. The Headwaters Vineyard is farmed in compliance with organic standards.
Fruit from the certified organic block at Headwaters Vineyard were harvested late March and early April. The grapes were quickly crushed and pressed into stainless steel tanks where the juice was fermented at controlled temperatures with a combination of selected and indigenous yeasts to capture the intense varietal flavours. Strict organic procedures were followed at all times.
