"This is beautifully matured and complex on the nose showing dried cherry, smoked game, dark olive, earthy mushroom and toasted almond characters. The palate is elegant and wonderfully rounded, delivering sweet fruit flavours together with engaging savoury nuances, finishing persistent and flowing. This mystery vineyard was picked in 2 days. The grapes were destemmed on arrival at the winery. They were cold soaked on skins to extract colour and flavour before yeasts were added for fermentation. Once fermentation was complete, the wine was gently pressed off and transferred into French oak barrels (25% new oak). The wine underwent a 100% malolactic fermentation, and was aged in oak for 9 months before bottling.
