This is a vivacious young Pinot, bright, ripe & fragrant. The inviting bouquet shows fresh raspberries, red cherries and blueberries. Spring flowers are dominate on the nose. The palate flows with crisp, ripe red berries, vanilla pod and exotic spice.
In the winery, the different batches of fruit are processed separately so that the individual characters can be seen on their own, then further complexities are added by incorporating different techniques and yeast combinations. The grapes are cold soaked for between 3 and 5 days and then fermented at about 28-32 °C. Depending on the fruit, post ferment can be up to 15 days, before the wine is pressed off. The wine is then aged using 100% French oak with a range of coopers. Perfect for drinking now or over the next four years.
