Description
The nose is packed with citrus blossom, red apples and fresh lime juice, whilst the palate is crisp yet intensely flavoured. An elegant wine with a touch of sweetness balanced by a firm acidity.
The quality of this wine is all in the superb fruit from the Lawson's Dry Hills Waihopai Valley vineyard where the extreme diurnal temperatures together with clay soils produce wines with beautifully intense aromatics and flavours. The yield is carefully managed, giving us a moderate size crop that allows a long, slow development of flavour. The 2016 vintage was warm and dry and allowed us to pick the grapes in perfect condition.
The grapes for this wine were gently pressed and the free-run juice fermented in stainless steel at a cool temperature of about 12°. After fermentation, the wine was racked, given a light filtration and then bottled. The naturally high acidity in this wine will allow it to age gracefully for some years – at least five.
Food Pairing: Great with dishes such as Thai salads or to balance something rich such as chicken liver pate. It is also the perfect aperitif.
