Description
This hand crafted Pinot Noir was grown on our estate-owned Cowslip Valley vineyard in the Waihopai Valley of Marlborough. Traditional winemaking techniques including fermentation in open vats with hand plunging, results in a smooth, full-flavoured wine.
This hand crafted Pinot Noir was grown on Babich's Waihopai Valley vineyards, Cowslip Valley and Clonal selection, which were machine harvested and de-stemmed before reaching the winery. Whilst the grapes were not crushed they did see some cold soaking prior to fermentation in open vats with wild & inoculated ferments. Use of hand plunging resulted in a smooth, full-flavoured wine. Other traditional winemaking techniques used included malolactic fermentation in French barriques (30% new) and aged in barrel for a further 10 months. Recommended cellaring for this wine is 1-5 years from release date.
Food pairing: A good partner for a char-grilled Scotch fillet steak topped with grilled flat mushrooms.
