"The wine combines attractive fruit flavours together with elegant spicy/savoury nuances, displaying lifted aromas of dark cherry, black tea, game and clove on the nose with hints of floral and mushroom notes. It is juicy and beautifully rounded on the palate, and shows elegant mouthfeel and silky texture, beautifully framed by fine tannins. Very approachable and appealing. "Ripe, fruity, varietal and loaded with pinosity; aromas and flavours of cherry, cranberry, dried raspberry and a touch of rhubarb. Some brown spice moments from the oak with a cedar wood and light smokey barrel note. Fine tannins with a dusty chalky texture. Lifted aromas of ripe berries with hints of dark spices. Damson plum with undertones of freshly ground coffee and vanilla pod, followed by well balanced acidity, fine tannin structure, and a clean lingering finish.
At the winery each clone is held cold for four days prior to fermentation. Cultured yeasts were used for the primary alcoholic fermentation during which the fermenting must was hand plunged six times daily and then up to eight times daily during the height of fermentation. When dry, each batch was pressed to tank, settled and then racked off gross lees to older seasoned French Oak.
The wine underwent malolactic fermentation before being blended and gently prepared for bottling. Drinking beautifully from release date, this wine can be enjoyed young, or with careful cellaring will mature into a more complex wine that can be enjoyed for the next five years.
Food Pairing: This Mystery Poinot is well matched with spring lamb.

A delightful, lightweight pinot with subtle flavours of cherries and hints of spice, drinkable now, but may become a bit bolder with age. Would definitely buy again.
