Description

This wine displays a beautiful purple colour with dark purple reflections. Its nose is charming and reveals aromas of red fruits, spices and lavender. The mouth is surprising and gourmet, it offers a beautiful roundness with notes of raspberries and cherries. The finish is dense, long with a spicy persistence.

Vintage after vintage, ever since 1834 the Jaboulet family has demonstrated peerless expertise in producing Maison Paul Jaboulet Aine wines and bringing them to maturity. Six generations of cellar masters have succeeded one another and each year they have carefully recorded the secrets of that vintage. Today, Caroline Frey is carrying on that tradition so as to bring out the quintessence of our wines throughout their development. Thus, the "Family Secret" wine forms part of a continuous expertise gained over more than a century, a winemaking savoir-faire that is passed in confidence from family to family.

The veraison starts by the beginning of August and ends up 15 days later. The white's harvest starts by the end of August. Storms at the beginning of September release the phenolic ripeness. The first reds are harvested mid-September, in soils of limestone and clay. The grapes are handpicked. The harvest is followed by a traditional vinification with long vatting, controlled fermentation temperatures with pump-overs every day. This blend has aged in stainless steel and French oak cast for 12 months. Best enjoyed within 1 to 5 years.

Food pairing: This wine matches perfectly with grilled/roasted meats, pot au feu and cheese.
