"Bright, pale straw-yellow colour, lighter on the rim. The nose is fresh and full with good volume of aromatic white and yellow stonefruits, with pears and exotic floral notes, and honeysuckle, unfolding a layer of nutty lees and subtle oak elements. Dryish to taste and medium-full bodied, the palate has well packed, rich flavours of stonefruits and pears, with nuances of exotic florals and honeysuckle, unfolding nutty lees notes. The mouthfeel possesses positive phenolic textures providing good presence, and crisp acidity lending freshness and energy. The fruit flavours carry with good linearity and some underlying power to a long and sustained, elegant finish of stonefruit and exotic florals. This is a well concentrated and structured dry Pinot Gris with good depth of stonefruit and pear flavours with florals and a complex layering of nutty notes. Match with Asian and Middle Eastern fare over the next 3-4 years. A Fresh and full appealing palate of aromatic white and yellow stonefruits, with pears, exotic floralnotes and honeysuckle, unfolding a layer of nutty lees and subtle oak elements. The wine shows vibrant acidity with a long and smooth finish.
The fruit was sourced from three Starborough vineyards. 40% O’Dwyers Farm Vineyard in the heart of the Wairau Valley and 15% Starborough Terrace Vineyard and 45% Long Lane Vineyard located in the Awatere Valley. All sites have complemented each other to produce an elegantly balanced and complex wine. The yield on the two cane VSP (vertical shoot position) trained vines was closely monitored through the growing season. Targeted shoot and bunch thinning was performed to produce low yielding intensely concentrated fruit. Additional fruit thinning was done on colour development post veraison to further enhance bunch uniformity. The three vineyards were carefully monitored during ripening and hand-picked in cool early morning conditions at peak maturity and flavour development.
The fruit was crushed and pressed quickly at cool temperatures to retain fruit flavour and freshness. Following the settling period the clear juice was racked to stainless steel and then fermented using selected yeast at cool temperatures. A 10% portion of the juice was fermented in seasoned French oak barrels adding weight, texture and complexity to the finished wine. Fermentation was stopped at 6.0 g/l residual sugar. Before blending, the individual components
were left on light yeast lees for three months helping build additional texture and creaminess to the palate.
