"Bright, even, pale straw-yellow colour. The nose is firm and tight, with intense, penetrating aromas of white stonefruits melded with notes of passionfruit, gooseberries and green stonefruits along with mineral nuance and subtle secondary green bean hints. The aromatics are refreshing and steely. Dry to taste and medium-bodied, fine and tightly concentrated flavours of white and green tonefruits show with white florals, herbs and minerals, and suggestions of secondary green bean flavours. The palate is refined and smooth-flowing with very subtle textures, and crisp, racy acidity providing energy and linear drive, leading to a long, lingering finish of herbs and minerals. This is a refined, tight, brisk and fine-featured Sauvignon Blanc with white and green stonefruit, herb and mineral flavours. This Mystery Single Vineyard Sauvignon Blanc is a wine of great concentration, with vibrant aromas of papaya, grapefruit and blackcurrant. The silky palate has a herbal thread and salty minerality with an intense lingering finish.
The single vineyard where the fruit for this Mystery Sauvignon Blanc was sorced is located on the fertile, free draining soils of a Marlborough sub region where the coastal location and the cooler climate creates a longer growing season, providing a greater intensity of flavour to the wine and a hint of salt to the palate. From flowering through to ripening the 2015 growing season was warmer than usual, although the cooler evenings allowed the unique flavour development typical of Marlborough Sauvignon Blanc. The fruit was carefully monitored during ripening and machine harvested in the cool of the evening at maximum flavour maturity and physiological ripeness. The grapes were transported promptly to the winery where they were immediately pressed to minimise skin contact. After settling, the racked juice was inoculated with yeast and fermented at 12 degrees celsius for three weeks to retain fruit flavour and freshness. This wine is drinking beautifully now and will be best enjoyed over the next two to three years.
Food pairing: An ideal match with pan-fried scallops, fresh asparagus or Marlborough mussels.
