Description

Dark cherry red with violet hues in the glass. An elegant yet mature nose with black and acidic red fruits such as raspberries, sweet spices like nutmeg, clove and vanilla, cedar and light roasted wood armoas interrwined with liquorice. Fleshy, silky with a well structured balance. A refreshing acidity gives the wine a long length with mature tannines, which in time will become smoother. A long lingering wine with matching flavours and aromas which come together with a perfect finesse. 

The winery was founded in 1994 by Amalio Aragón along with his children, yet the origins started back in 1970 when the father started buying small plots from neighbouring vine growers with the dream of one day being able to elaborate wine in his village of Quintana del Pidio. When he decided to create his own winery, he called it Cillar de Silos after the monk who historically was in charge of the administration at the Silos Monastery. The cillero was the person in charge of the daily organization of the dispensary, the wine and food for the Order.

The Cillar de Silos Crianza is the backbone of the winery as it reflects the character of the Tempranillo variety in Quintana del Pidio, with the grapes for this wine is sourced from different terroirs of small plots, some of which are tiny with very old vines. The average vine age on these plots is between 25 and 40 years. Serve at 14-15º as the wine’s virtues will open up and express themselves at 17-18º. Soil type here is predominately sandy and limestone soils and is surrounded by forests providing excellent drainage and protection from the dangerous winter frosts and cold northern winds by these forests which encircle the vines. The climate in Quintana del Pidio is extreme, with harsh winters and roasting summers and low rainfall with an average being between 400 and 600mm yearly. The influence of the these huge differences in temperature between night and day gives Cillar de Silos wines a defined acidity and elegant range of aromas. In the winery the 100% Tempranillo juice was oak aged for 13 months in French Oak.
