Aquilani Tuscan Sangiovese 2015 (Italy)
Aquilani Tuscan Sangiovese 2015 (Italy)
Description
Pouring ruby red, the nose is intensely vinous showing fragrant notes of violets. The palate is harmonious and dry, with fine grape tannins and a savoury finish.
Sangiovese 100% grown in the Tuscan appellation sub-regions of Siena, Florence, Pisa, Pistoia and Arezzo on calcareous, clay soils. The grapes are harvested at optimum maturity in the second half of September, and undergo a pre-fermentation maceration on skins to extract colour, lasting for 6-8 days. The must is placed in stainless steel tanks where fermentation is completed within 8-10 days at 24-28°C. After the fermentation the wine remains in tank for around 3 months prior to filtration and bottling. Enjoy whilst the wine is young and vibrant or over the coming 2-3 years. Serve at 16-18 °C.
Food Pairing: This light bodied sangiovese shows great versatility and would be an ideal match with Italian style cured meats, hearty pasta dishes, white and red grilled or roasted meats, and fresh cheese such as a young pecorino or caccioto.
