This Chardonnay is an expressive and elegant wine with exceptional varietal flavour. Light, lemon yellow complextion in the glass. the bouquet is fresh yet intense, showcasing pineapple, citrus and apples with a backdrop of vanilla. A medium bodied wine with a long, sweet finish.
Over a century has passed since Don Melchor, the winery's founder, created a legend. When he discovered his finest Concha y Toro wines were missing, he spread the word amongst the local villagers that the devil lived in his cellar. From that day, the wine has been known as Casillero del Diablo, the devil's cellar. And the wine thieves remain deterred.
The Chardonnay grapes for this wine were harvest from vines that grown in benchland associated soils. Once in the winery 30% of the wine was fermented in French oak and aged eight months on the lees. The remaining 70% was aged 8 months in stainless steel. 10% underwent malolactic fermentation.
Food Pairing: Serve slightly chilled alongside seafood or poultry dishes. Also makes for a delicious paring next to medium-sauced pastas and most cheeses.
