Description

In this new selection case Black Market brings you a great organic selection from Dominio de Punctum, located in Las Pedronñeras (Castilla La Mancha), halfway between Valencia and Madrid where the region’s sandy loam soils, rich in limestone make for an optimum environment to grow grapes with unique personalities. This 'chateau' style winery work with organic and biodynamic methods to deliver top quality grapes, whilst improving the environment, rather than spoiling it!

3 x Pablo Claro Organic Tempranillo 2017

Nice cherry coloured with a violet shade. Red berries and cherries bouquet. Fresh and harmonious with long finish on the palate. Simply put this cool climate, balanced Tempranillo is wonderful for everyday quaffing with its outstanding value!

Pablo Claro Tempranillo is produced on our Estate from organically grown grapes. Night harvested and cold- macerated.

Despite this area being known for warmth, the vines benefit a cooler climate due to their high elevation, growing 750 meters above sea level. In addition to this grapes for this wine were also harvested at night to preserve freshness. In the winery they were cold-macerated before fermentation to enhance natural colour and fruit intensity before being fermented at controlled temperature in stainless steel.

Food Pairing: The cherry vanilla fruit opening on a friendly palate make this an extremely versatile food wine with a range of white and red meats. We recommend pairing with traditional Spanish fare such as rustic pork dishes or, paella served with rabbit.

Pablo Claro ‘Special Selection’ Cabernet Sauvignon/Graciano 2013

This is a beautiful Spanish blend is unique in its use of two powerful, full-bodied varieties (Cabernet Sauvignon 50% & Graciano 50%). This is only achievable due to the long growing season of this area, which achieves fully-ripe grapes. Showing a deep dark cherry colour in the glass and an intense, exotic bouquet with aromas of spice on the nose. On the palate notes of vanilla and ripe fruits can be found. This wine is well structured, with sweet tannins, full body and harmoniously long finish.

The vines for this wine were grown using biodynamic agriculture, as another step forward in Dominio de Punctum's commitment to organic cultivation. In these methods the viticultre works closely with the ecosystem, soil and respecting the natural life cycle of the vines throughout the year to achieve the highest quality grapes and wine. Grapes for this wine were harvested at night to preserve freshness. Whilst in the winery 9 months maturation in French oak produced the opulent blackcurrant characters of Cabernet with the perfumed, violet aromas and spice of the Spain’s rare and indigenous Graciano variety with vanilla notes.  Overall this is a rich, blockbuster red with powerful but well-rounded tannins that whilst appealing now will also benefit the patient with up to 3-5 years of cellaring.

Food Pairing: A great match for grilled meat, cheese and full-flavoured fare.
