"Bright, light straw-yellow colour, paler on the rim. The nose is elegantly expressed with slender aromas of cut grass, green capsicums and savoury gooseberry fruit forming a rounded core. Dry to taste and medium-bodied, the palate has softly refreshing flavours of cut grass, capsicums, gooseberries and nuances of nettles. The fruit forms a rounded core giving the palate good presence. The mouthfeel has soft acidity and the wine flows along a gently textured line leading to a soft finish of cut grass and savoury gooseberries. This is a softly presented Sauvignon Blanc with flavours of cut grass, capsicums and gooseberries with gentle acidity and a rounded heart. Match with salads and vegetables, and Mediterranean fare over the next 2 years. Grown and made under contract by a Wairau Valley producer. Fruit from 2 certified organic sites, hand-picked and cool-fermented in tank with 8% in neutral French oak to 13.5% alc. and 2.4 g/L RS, the wine aged on lees" Raymond Chan, Nov 2017
This Sauvignon Blanc exhibits lovely ripe tropicals and hints of basil and lime from the Wairau Valley clays. These follow through to the palate - which is fine and soft with vibrant fleshy fruit and great texture which are both balanced by a ripe, juicy acidity and lingering minerality, the result of an exceptional season. It is simply put... utterly delicious!
The 2016 vintage of Therapy's Sauvignon Blanc, is a blend from two special Marlborough vineyards in the Wairau Valley grown under certified organic principles. 2016 was an fantastic vintage in Marlborough, characterised by above average sunshine hours and a much drier summer. In the vineyard grapes were hand picked and sorted to ensure that only perfect fruit made it into the press.
In the winery a minimalistic approach was applied to the wine making techniques with a slow cool fermentation in a number of different tanks, (including 8% fermented at warmer temps in neutral French oak). All parcels spent time on fine lees, post ferment for texture.
