We time the picking of the Sauvignon blanc based on the acidity of the grapes so we are looking for a vibrant core of acid to provide the focus and length to the wine. The solids in the ferment provide tannin structure and a pleasing grapefruit finish which enhances the length. In a cool year such as 2011 we promote the acid and tannin to allow a small amount of natural residual sugar to remain in the wine providing texture and a little weight. The Sémillon adds another dimension to the wine and gives it an ability to age far more gracefully than a 100% Sauvignon blanc blend. This 2011 is fresh and fragrant with mineral chalk characters, citrus notes and hints of tropical fruits.

With Bloody Bay Sauvignon Blanc you’re getting alot of wine for your dollar. Quite ripe on the nose, it is displaying some melon scents. The palate shows grapefruit and gooseberry with lemon and a hint of capsicum for complexity. Texturally this wine is really nice in the mouth, one of its most appealing features. The fruit from this wine is sourced from our Gimblett Road vineyards as well as from Crownthorpe, a cooler more elevated vineyard site. These two locations have different soil types, aspects and altitudes providing us with differing fruit characters, which have been combined in this wine. This Sauvignon Blanc 2010 was given a cool ferment in stainless steel to retain the lively, fresh herbaceous characters the fruit exhibited. The individual components were blended, stabilized and filtered prior to bottling.

The wine gives impressions of passion-fruit, citrus fruits and guavas, intermingled with hints of ripe gooseberries and freshly crushed herbs, particularly thyme. It is well balanced with good fruit concentration and weight in the mouth but a lively, crisp, dry, flinty finish.
The grapes were grown on well drained stony soil in the Waipara Valley. The rows of vines are orientated in a north south direction to ensure good sunlight exposure on each side of the vine and to assist even ripening of the berries.
