Estate Vineyards Syrah '12 has a bright Crimson colour with characteristics of raspberry, red cherry, rosemary and allspice over savory charcuterie notes. The palate is soft and full flavoured with well intergrated, fine grained tannins leading to a supple, even finish.

The Syrah grapes were combined with a small quanity to viognier grapes, then destemmed and co-fermeneted. The resulting wine remained on skins for extended maceration before pressing.  It was then run off to a  mixture of new and seasoned French oak barrels for ten months' maturation, during which time it was regularly top racked. The wine recieved a traditional egg white fining, before being bottled in March 2013.

The wine is deep garnet-purple in colour with lifted aromas of crushed red berries and darker cassis with hints of floral perfume, clove, Mediterranean herbs and cedar. The palate is vibrant with good concentration and supple approachable tannins. We gently harvested the bunches and destemmed the fruit into small fermenters. One parcel was cold soaked to extract colour and vibrant fruit characters. Traditional warm fermentation followed, peaking at 35°C, with a mix of hand plunging and pump-over. After maceration on skins, the wine was run to predominantly French barriques for malolactic fermentation and 10 months of barrel maturation.

We harvested the Cabernet Franc on 24 April and the Cabernet Sauvignon on 5 May. The bunches were destemmed into small fermenters. Traditional warm fermentation followed, peaking at 35°C, using a mixture of hand plunging and pump-over techniques. Afterwards, the wine macerated on skins for a month. The finished batches were pressed off and racked to predominantly French barriques. Malolactic fermentation occurred in barrel, followed by 20 months of maturation.
