Whilst the style is essentially fruit-driven, Thomas Hyland Cabernet Sauvignon shows the classic varietal elements of ripe blackcurrant/cedar aromas and fine-grained tannins.

The nose shows sappy, varietal berried fruits with hints of nutmeg, background oak. The wine captures plum, mocha coffee and vanillin flavours. A firm palate, yet one that shows the balanced Penfolds oak maturation influence, and chunky, yet ripe tannins. Ready to drink now like other South Australian cabernet sauvignons.

The 2005 Cabernet Sauvignon Serpico (100% McLaren Vale fruit) was treated like Amarone with the grapes picked relatively underripe and green, then dried for seven weeks before they were fermented. The result is a distinctive, full-bodied Cabernet with no pruny or raisiny characteristics whatsoever. Its fresh acidity and lively backbone support a wine of enormous richness and intensity, offering up classic creme de cassis notes intermixed with white chocolate, damp forest, cedar and toasty oak.
