Like the Command block, which is an amazing resource to the Elderton Estate, the Ashmead block has consistently produced small parcels of excellent quality fruit. Traditionally the finished wine has been blended into the Estate Range of wines, however, in 1998 Lorraine Ashmead, the Estate Principal, saw the brilliance of the wine, and decided to release it under the Ashmead Family name. ”2005 followed a vintage that many thought would rank highly in the decade and the chances of an ‘odd year’ standing over such a vintage seemed remote. But with a wet winter providing the sustenance and a mild, dry summer following, Elderton fruit showed excellent development, particularly old vine harvests. The grapes for this wine were picked at night to ensure that they were as cool as possible. Crushed to modern rotary fermenters the grapes were then allowed to macerate for 2 days before inoculation and fermentation. Pressed off skins 7 days later and allowed to go through the second malolactic fermentation. The wine has then had minimal handling prior to filtration for bottling.

The colour is a deep inky purple. The nose is a complex mixture of ripe blackberry and plum fruit with a dash of creamy vanillin oak. The palate is medium to full bodied which starts with some sweet plummy fruit, the flavour then builds in the palate to provide an explosion of raspberry flavours. There is some lovely mouth coating tannins which combine with dark chocolate oak and fruit to provide a great depth and length of flavour.

The grapes are crushed and de-stemmed into fermenters. Yeast is added immediately once in fermenter and the ferments are pumped over twice daily to maximise colour, tannin and flavour extraction.
