The 2011 Man O’ War Rose is 100% Malbec which was handpicked and whole bunch pressed. After pressing the juice was fined and cold settled before being racked clear to a tank for fermentation. Fermented to complete dryness, the Rose underwent a partial malolactic fermentation to add texture to the palate. The Rose was then filtered and stored in the winery prior to bottling at 5 degrees C to retain some natural carbon dioxide from the fermentation process and to enhance the wines minerality and dryness to balance against its soft acidity.
