A tricky year in the vineyards north of Auckland, with good bud burst and fruit set resulting in a big crop, so much fruit thinning was needed. Some rain in February and March meant ripening was slow and the grapes were not harvested until mid May - two weeks later than normal.
The grapes were handpicked at 21.5 brix to retain acids and avoid a high alcohol. Chilled to 8 brix, destemmed but not crushed and held in press for 6 hours to achieve desired colour from skin contact. Light lee included in ferment, to achieve complexity. Cool ferment using aromatic yeast. Fined with isinglass, cold stabilised and bottled.
